For the Brownie Batter
1/2 cup, melted Unsalted Butter
2 Large Eggs
2/3 cup, White Sugar
1/2 tsp, Vanilla Extract
2/3 cup, All Purpose Flour
1/3 cup, Unsweetened Cocoa
1/4 tsp, Salt
12 Oreo Cookies
For the Cheesecake Layer
1, 8 oz Package Cream Cheese at room temperature
1 Large Egg Yolk
1/3 cup, White Sugar
Red and Yellow Food Colouring
Preheat oven to 350 degrees. Grease and line an 8 by 8 baking pan.
In a bowl, combine melted Butter, Eggs, Sugar, and Vanilla. Mix until incorporated, then add Flour, Cocoa, and Salt. Stir mixture until smooth.
Pour half of Brownie Batter into pan and spread to the edges evenly. Cover surface of Brownie Batter with one layer of Oreos. Pour remaining Brownie Batter over Oreos, and spread evenly.
In another bowl, beat Cream Cheese, Egg Yolk, and Sugar until smooth. Add enough Red and Yellow Food Colouring to mixture to create a vibrant orange colour. Stir to incorporate.
Place dollops of Cheesecake Layer over the Brownie Batter. Using a toothpick, or knife, swirl the Cheesecake mixture into the Brownie Batter to create a marbled effect.
Bake in oven for 25 minutes. Allow to cool to room temperature completely before cutting and serving.
