Cinderella Cake Recipe 1

Ingredients

To Make The Cake:

  • 2 cups sugar
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cup flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1-15 oz. can pumpkin puree
  • 1 teaspoon vanilla

To Make The Frosting:

  • 8 ounces cream cheese, softened
  • 1 1/2 sticks unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla
  • 1/2 cup toasted pecan pieces, chopped

Instructions

To Make the Cake: Beat sugar and eggs until creamy and light in color. Add oil, continuing to beat. Combine dry ingredients with a whisk, gradually mixing into to egg mixture. Add pumpkin and vanilla, mix well. Pour into greased bundt pan. Bake at 350 degrees for 55 minutes. Let stand in pan for 10 minutes, then turn out onto a baking rack to cool completely. Frost.

To Make the Frosting: In a medium bowl, blend softened cream cheese and butter til smooth and creamy. Add vanilla. Then add powdered sugar until desired consistency is achieved. (you may need to add more to achieve this) Frost and top with toasted pecans before frosting sets.

Cake Mixture Ingredients

  • 2 cups sugar
  • 4 whole eggs
  • 2 cups flour
  • 2 cups canned pumpkin
  • 1 cup oil
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspon salt

Icing Ingredients

  • 2 cups powdered sugar
  • 1 stick butter softened
  • 1 package cream cheese 1 block of cream cheese
  • 2 teaspoons vanilla extract

Instructions

Cake Instructions

  • Preheat oven to 350º F
  • Lightly oil Bundt pan
  • In a large bowl, combine sugar and eggs; using a mixer, combine till light and smooth
  • Gradually add oil to sugar and eggs, and continue to beat until smooth
  • Add dry ingredients to mixture; beat until smooth
  • Add pumpkin and beat until smooth
  • Pour batter into lightly greased Bundt pan
  • Bake for 50 minutes

Coachman’s Icing

  • Soften butter and cream cheese
  • Using a mixer, in a large bowl add: powdered sugar , butter and cream cheese; mix until smooth
  • Add vanilla to mixture and continue to blend
  • Add food coloring (optional) and blend well
  • Chill icing for 15 minutes
  • Put icing into piping bag and apply icing to cake

  • 2 cups sifted flour
  • 2 teaspoons soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 cups canned pumpkin
  • Coachmna’s Icing
  • 1 (3 ounce) package cream cheese
  • 1 pound box powdered sugar
  • 1 stick margarine
  • 1 teaspoon vanilla

Preparation

Beat sugar and eggs until light. Add oil and continue beating. Add pumpkin and mix well. Add dry ingredients and bake in a greased Bundt pan or angel food pan at 350º for 55 minutes. Let cake stand in pan for 10 minutes, then turn out on rack or cake plate. Frost with Coachman’s Icing.
