Banana Magic Cake Recipe 1

Ingredients

  • 4 eggs separated
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 Tbs cold water
  • 1/2 cup unsalted butter-melted and slightly cooled
  • 1 medium/large banana mashed
  • 1 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 tsp salt
  • 2 cups milk luke warm
  • Powdered sugar or caramel sauce optional

Instructions

  • Preheat oven to 325.
  • Spray a 8″x8″ baking dish with non stick cooking spray, set aside.
  • In stand mixer fitted with the whisk attachment beat your egg whites until stiff peaks form, set aside.
  • In a large bowl whisk together eggs, sugar, brown sugar and water until pale yellow in color about two to three minutes.
  • Whisk in your melted butter until incorporated then add in your banana and vanilla and whisk until just combined.
  • Slowly add in your flour and salt, whisking until blended.
  • Lastly add in your milk until all lumps are gone and batter is smooth.
  • Fold in your egg white until fully incorporated.
  • Pour into prepared baking dish and bake uncovered for 1 hour, checking for browning after 45 minutes.
  • Remove from oven and cool completely.
  • Sprinkle with powdered sugar or drizzle with caramel sauce.
  • Cut and serve.

Ingredients

  • 1/2 cup unsalted butter-melted and slightly cooled
  • 2 cups milk-lukewarm
  • 4 eggs-separated
  • 3/4 cup sugar
  • 2 tablespoons light brown sugar
  • 1/2 cup mashed banana (1 medium banana)
  • 1 cup flour
  • 1 teaspoon vanilla extract
  • powdered sugar for dusting

Instructions

  1. Preheat the oven to 325°F. Lightly grease 8×8 inch baking dish, set aside (you can line it with parchment paper leaving the sides overhang the pan, it will be easier to serve, you can lift the cake and transfer plate).
  2. Whip the egg whites until STIFF peaks form, set aside.
  3. Beat the egg yolks and sugars until pale yellow.
  4. Mix in melted butter and the tablespoon of water (for about 2 minutes) until evenly combined.
  5. Mix in mashed banana just to combine.
  6. Mix in flour until evenly incorporated.
  7. Slowly beat in the milk and vanilla extract until well combined.
  8. Fold in the egg whites (1/3 at a time, then repeat until all of the egg whites are folded in). NOTES: The batter is very, very thin!!!
  9. Pour the batter into the pan and bake for 45-60 minutes (until the cake is barely jiggly in the center). Baking time might vary depending on your oven or pan you use, but start checking after 45 minutes. If the top browns quickly before the minimum of 45 minutes, you can cover the cake with aluminum foil.
  10. Cool the cake completely before dusting with powdered sugar. Even cooled, it will be slightly jiggly because it has custard layer in the center!

Ingredients

  • 2 cups lukewarm milk
  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 1/2 cup banana, mashed
  • 4 large eggs, separated, room temperature
  • 3 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 pinch nutmeg
  • powdered sugar, garnish

Instructions

  1. Preheat oven to 325º F and line an 8×8-inch baking dish with parchment paper, or grease with non-stick spray.
  2. In a medium bowl or mixer, beat egg whites until stiff peaks form. Set aside until ready to use.
  3. In a separate large bowl or mixer, beat egg yolks, sugars (white and brown) and vanilla extract until ribbony and lightened in color.
  4. Mix in melted (and slightly cooled) butter and mashed banana until incorporated, then add in flour, cinnamon and nutmeg until just combined.
  5. Beat in milk until mixture is smooth, then, working in batches, fold in egg whites.
  6. Pour batter into prepared baking dish and place in oven.
  7. Bake for 45-60 minutes, or until top is golden brown and center jiggles just slightly. Tent with foil, if necessary.
  8. Once center is just set, remove from oven and let cool, then chill until set. Dust with powdered sugar, slice into squares and enjoy!
